KALE’N IT WIT MY EGGS
Another Fav in mi casa is Kale and Eggs.. I know sounds so healthy and boring but its so simple that please believe with these simple steps it also brings MAJAH FLAVAH!!
The other selling point is Kale is just so damn durable and lasts for more than a few days in the fridge.. when you tend to be out of town as often as I am.. this is a major selling point!
What you’ll need:
2 eggs
2 handfuls of chopped Kale
Olive oil
Minced garlic ( I have a jar of minced garlic in my fridge which is easy and readily available )
Salt & pepper
HOT TIP: when cutting Kale make sure you cut the stem out before chopping.. trust the stem can take longer to cook and it just is easier to chop your kale with out it..
Heat a nonstick pan on medium heat
I usually do a spiral of olive oil in the pan .. add minced garlic and wait until til it comes to a slight simmer. Add one handful at a time and place kale into pan, then cover and let the kale wilt. Add salt and pepper to taste and flip kale so that both sides can be coated with olive oil. Crack two eggs over kale cover and let the steam cook the eggs.
