Fresh, EASY, Healthy Cucumber Salad(s)

The perfect POTLUCK/BBQ item to bring- and make it ICE COLD too!!

these recipes will definitely have you wanting to get a mandolin- if you don’t already have one! The perfect type of slice and it does all the work for you!

A Paleo/Keto/Whole 30 Cumber Salad- 

what you’ll need:

  • 2-3 Japanese cucumber *what I used*

/Persian or English cucumber will work as well/

  • 2-3 radishes

  • a bunch of fresh dill ( the more the better IMO )

  • a bunch of parsley

  • s&p

  • 1/3 cup apple cider vinegar

  • 1/4 cup olive oil

  • 1/2 or less red onion *preference*

Directions: 

Slice cucumber, red onion and radishes. Finely chop herbs. Combine wet ingredients in separate bowl with salt and pepper and mix well. In intended serving bowl- add cucumber, radishes, onion. Top with herbs, and dressing. Toss and place in fridge for an hour or more before serving- 

Super refreshing- I served this with baked salmon!

Easy to make, and super refreshing for any summer occasion!!

I literally made this salad in 5 mins- I prefer it chilled to the max in the fridge but you can totally serve as soon as you make it! 

what you’ll need:

  • 2 Japanese cucumbers, or 1 english cucumber 

  • ¼ cup rice vinegar

  • 1 teaspoon sugar

  • ¼ teaspoon salt

  • 2 tablespoons sesame seeds, toasted preferred

 Directions:

Slice cucumber with mandolin, then place cucumber slices on a paper towel lined baking sheet, blot cucumbers to express an excess water. In a bowl mix ingredients. Then toss cucumbers. Serve in a separate ( optional; previously chilled ) bowl. You can either eat right away or cover and refrigerate for an hour!
