Buddha Bowl

This nourishing buddha bowl is absolutely deLishhh and will keep you satisfied the whole day/night!

The actual meaning of a Buddha bowl is a vegetarian meal, served on a single bowl or high-rimmed plate, which consists of small portions of several foods, served cold. These may include whole grains such as quinoa or brown rice, plant proteins such as chickpeas or tofu, and vegetables.

I threw this together and it was accidentally ahhhhmazing. Perfect for traveling and at home it was even more deLishhh.. 

What you’ll need:

  • handful or more of mixed greens/kale

  • 1/4 shredded or finely chopped purple cabbage

  • chickpeas

  • broccoli

  • Okinawan sweet potato

  • cauliflower rice cooked and cooled (optional; I used my leftover from the night before )

  • quinoa cooked and cooled (optional)

  • sliced carrot

  • Furikake

Directions:

Roast on one pan broccoli, chickpeas, and sweet potato. Incase you need a detailed how to I posted it here. While the veggies are roasting prepare your salad. Place mixed greens of choice in a bowl, I used my Madeline to slice cabbage and carrots. Add quinoa or cooked cauliflower rice ( both optional and delish without ). Once the veggies are finished roasting. let stand and cool. Add roasted veggies on top! SO yum!! 

  • For dressing its truly preference. However,I have  used sesame dressing or a balsamic- basically whatever is your fav. Top with some Furikake and you are good to go!!

This bowl is jam packed with healthy carbs and protein- guaranteed to keep you full and satisfied. After you make it once you won’t be able to stop!!

for all my flight attendants/ travelers/or even bring your lunch to work peeps out there- this salad truly holds up and honestly the colder IMO the better!

P.S This is my absolute fav fav plate I eat off every night- I just love a high rimmed plate and perfect for this dish!
