Yes there is another durable travel salad coming your way.. And its SO EASY

I know I know just when you were diging on my orijjj travel salad I came up with something to switch it up for ya! Okay actually this was Simon’s creation.. and it’s kind of ahhhmazing..

I wanted a cabbage salad to go for work and I had left over kale in the fridge, so he threw this salad together for me.. and honestly its my new fav.. which means I’m currently eating it non-stop. Lately I’ve had trips that have taken me outer island.. meaning I fly from HNL to OGG (Maui), wait for up to almost 2 hours, then finally take the scheduled flight out to any given west coast city. I found that this particular salad holds up really really really well. I do have an ice pack.. so that helps, but honestly its the durable consistency of the cabbage and kale that really make the difference…

without further ado

what you’ll need:

  • about half of less of a medium cabbage, thinly sliced

  • handful or more of kale chopped

  • cherry tomatoes ( hold longer )

  • cucumber

  • 1 carrot

  • celery

  • mint/cilantro/thai basil any fun flavor bursting herb

  • 2 chicken thighs ( optional )

Directions:

For this super easy Chicken:

Tenderize and lather on olive oil, salt, pepper & garlic.. again all interchangeable seasoning.. completely preference. Bake at 350 for 30mins. Done.

For Salad:

Chip Chop your cabbage and kale place in tubby, chop cucumber place on top, add desired amount of cherry tomatoes ( I highly suggest cherry tomatoes, they are super flavorful, also they keep extremely well, refrigerated or not, and at this point the point is in the event they are not ). Add herb of choice.

Chop 1 stalk of celery.. again another burst of refreshing flavor, ribbon your carrot..

I pile all my veggies on top of the bed of my chopped cabbage and kale, again because of the durability of each green really will absorb if any water from the veggies.


I pack my chicken separately or sometimes I just add a hard boiled egg or two.

Dressing is obviously preference. Recent obsesh is Primal Kitchen Lemon and Turmeric Vinaigrette.. its mouthwatering.. like seriously as I type this my mouth is watering. I also of course rotate in olive oil and vinegar.


***if you are not a flight attendant, use a travel size shampoo bottle for your dressing!***
